– 1 (15-oz) box yellow cake mix – 1/4 teaspoon cream of tartar – 2 large eggs – 1/2 cup neutral vegetable oil – 1/2 cup granulated sugar – 2 tablespoons ground cinnamon

Combine dry cake mix and cream of tartar in a medium mixing bowl. Blend eggs and vegetable oil in separate measuring jug until smooth. Add wet to dry ingredients and and stir until combined. Cover and chill for 1 hour in the refrigerator (do not skip chilling).

Roll dough into 1-inch balls. Roll each ball in cinnamon sugar. Place 2 inches apart on prepared cookie sheets.

Bake at 350°F on middle rack, one sheet at a time, for 8-10 minutes. Remove cookies from oven and allow to rest on cookie sheet for 1 minute, then immediately coat in fresh bowl of cinnamon sugar.
